Carrot Cake

(35 minutes at 350F)

Ingredients

  • 9×13 pan, greased & floured
  • 1 cup sugar
  • 1 cup flour
  • 2 cup grated raw carrot
  • 1 cup oil (less)
  • 1 cup whole wheat flour
  • 1 1/2 cup grated apple
  • 4 eggs
  • 1 1/2 tsp baking soda
  • 1 cup raisins, plumped
  • 1 tsp salt
  • 1/2 cup walnuts
  • 2 tsp cinnamon

Directions

  1. Blend together sugar, oil and eggs. Beat until slightly thick.
  2. Add dry ingredients and blend until smooth.
  3. Add remaining ingredients and mix.
  4. Turn into pan and bake.
