Raspberry Oat Muffins

(20 to 25 minutes at 400F)

Ingredients

  • 1 cup oats (quick cooking)
  • 1 egg, beaten
  • 1 cup buttermilk (milk plus 1 tsp of vinegar)
  • 1/4 cup shortening, melted
  • 3/4 cup brown sugar
  • 1 cup raspberries (without syrup) (try blueberries or peaches for a different flavour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup flour

Directions

  1. Preheat Oven to 400F
  2. Combine oats and buttermilk and let stand 5 minutes.
  3. In a separate bowl combine next 6 ingredients. Mix well.
  4. Add egg and shortening to oat mixture.
  5. Add to dry ingredients.
  6. Stir just till moistened. Batter will be stiff.
  7. Gently fold in berries.
  8. Fill cups.
  9. Bake 20 to 25 minutes
