Orange Marmalade Cake

Love this cake and easy to make! Even though it is a 1 layer cake it is substantial.

Ingredients

  • CAKE:
  • 2 c flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs, room temperature
  • 1 c sugar
  • 1 c buttermilk (regular milk + 1/2 tsp white vinegar)
  • 1/2 tsp vanilla extract
  • zest of 1 orange (1 tbsp +)
  • 1/4 c butter, melted and cooled to room temperature
  • 2 tbsp orange marmalade for filling
  • FROSTING:
  • 4 oz cream cheese
  • 4 tbsp butter, soft
  • 2 tbsp orange marmalade
  • 1 tbsp fresh orange juice
  • 1/2 tsp vanilla extract
  • 1/2 tsp orange extract
  • 2 c icing sugar

Directions

  • Heat oven to 350F
  • Prepare a 9″ cake pan with parchment paper on the bottom, grease bottom (parchment) and sides with butter.
  • Sift dry ingredients together in a separate bowl.
  • In a large bowl, hand whisk the sugar and eggs together until well combined.
  • Add the zest, vanilla, and buttermilk and whisk until well combined.
  • Whisk in the melted butter until well combined.
  • Add the flour mixture and whisk until just combined…don’t overmix.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 30 minutes or until toothpick inserted into middle of cake comes out clean.
  • Cool cake in pan for 30 minutes.
  • Invert cake onto a wire rack to finish cooling.
  • For the Frosting, combine the 1st 6 ingredients with a mixer.
  • Add the icing sugar and mix until well combined.
  • Carefully slice cake in 1/2 so that you have 2 layers.
  • Cover 1st layer with 2 tbsp of marmalade.
  • Smooth some frosting on top of marmalade layer..about 1/4 inch.
  • Add 2nd layer of cake.
  • Finish frosting entire cake.
  • Keep refrigerated until ready to serve.
