Apple Bran Muffins

(15 to 20 minutes at 375F)

Ingredients

  • 4 cup flour
  • 1 cup brown sugar
  • 3 cup bran
  • 3/4 cup shortening
  • 2 tsp baking powder
  • 3 eggs
  • 2 tsp baking soda
  • 1 ½ cup apple sauce
  • 2 tsp cinnamon
  • 1 ½ cup sour milk
  • 1 tsp salt
  • ½ cup raisins
  • 1/4 tsp nutmeg
  • 1 cup apple, chopped

Directions

  1. Preheat Oven to 375F
  2. Stir together dry ingredients.
  3. In a separate bowl, beat sugar and shortening until creamy.
  4. Add eggs, one at a time, and beat until fluffy after each.
  5. Stir in remaining ingredients.
  6. Add wet ingredients to dry ingredients and stir until just moistened.
  7. Spoon into muffin cups 7/8 full.
  8. Bake for 15 to 20 minutes
