Barley Pilaf

Ingredients

  • 3/4 cup butter
  • 1 lb mushrooms
  • 1 cup onions, chopped
  • 1 lb pot barley
  • 4-5 cups chicken broth
  • 1 tsp salt

Directions

  1. Sauté first 4 ingredients till golden brown and season with salt & pepper.

  2. Turn into large casserole and add 2 c broth.

  3. Cover and bake 30 min.

  4. Add remaining broth and bake 1 hr.

  5. Uncover and bake 30 min or until all liquid is absorbed.
