(20 to 25 minutes at 400F)
Ingredients
- 1 cup oats (quick cooking)
- 1 egg, beaten
- 1 cup buttermilk (milk plus 1 tsp of vinegar)
- 1/4 cup shortening, melted
- 3/4 cup brown sugar
- 1 cup raspberries (without syrup) (try blueberries or peaches for a different flavour)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 cup flour
Directions
- Preheat Oven to 400F
- Combine oats and buttermilk and let stand 5 minutes.
- In a separate bowl combine next 6 ingredients. Mix well.
- Add egg and shortening to oat mixture.
- Add to dry ingredients.
- Stir just till moistened. Batter will be stiff.
- Gently fold in berries.
- Fill cups.
- Bake 20 to 25 minutes
