Chickpea Salad

Refreshing salad!

Ingredients

  • 1 can chickpeas, drained
  • 1/3 of an english cucumber, roughly chopped
  • 1 small basket cherry or grape tomatoes, halved
  • 1/2 c finely chopped bell pepper (yellow or orange)
  • 1/4 c finely chopped red onion
  • 1 lemon, juiced
  • 1 tbsp parsley, fresh or dried
  • 1/2 tsp kosher salt
  • 1 tbsp olive oil

Directions

  • Combine all the ingredients and mix well.
  • Refrigerate at least 8 hours.  Flavours are best after 24 hrs.
  • Enjoy!
