- 1 can chickpeas, drained
- 1/3 of an english cucumber, roughly chopped
- 1 small basket cherry or grape tomatoes, halved
- 1/2 c finely chopped bell pepper (yellow or orange)
- 1/4 c finely chopped red onion
- 1 lemon, juiced
- 1 tbsp parsley, fresh or dried
- 1/2 tsp kosher salt
- 1 tbsp olive oil
- Combine all the ingredients and mix well.
- Refrigerate at least 8 hours. Flavours are best after 24 hrs.
